It’s already been a long winter. Several rounds of snow and ice have kept me trapped inside the house, wondering what to do with myself. Thankfully, some creative cooking (and multi-masking, of course!) has kept me very entertained.
Today, I’ve teamed with with Diet Coke® and Collective Bias to bring you one of my favorite recipes – a shake up to your winter routine: Chorizo Tacos and Diet Coke® Feisty Cherry.
Diet Coke has done a little shake-up of it’s own, introducing new, sleek cans for the original Diet Coke as well as for 4 new added flavors in addition to the original Diet Coke: Fiesty Cherry, Ginger Lime, Twisted Mango and Zesty Blood Orange. Don’t worry, though–just because the original Diet Coke is getting a facelift does not mean the flavor is changing; it still has the same great taste it’s always had. 😉
All 5 varieties can be found at your local Kroger (I went to the one at Seminary Square, in Bloomington) and paired with your healthy lifestyle. Diet Coke is available in both 8 packs and singles, so that you can grab one on the go, or stock up on your favorite flavors.
My mom and I didn’t completely clean out the Btown store (we thought about it), so you should be able to find it in the bistro section by the produce. 😛
I’ve long been a Diet Coke fan, so when they reached out, I was really excited to help them show off their newest creations! This recipe is one that I make often and love, and pairing it with Diet Coke Fiesty Cherry only made sense. I was thinking.. #ItsAMatch!

So, without further ado, here we go:
Recipe: Chorizo Tacos + Diet Coke® Feisty Cherry
Total time: 20 minutes
Prep time: 10 minutes
- 9 oz tube of pork chorizo
- 1 pack of corn tortillas (you’ll use 8-16, depending on preference)
- 1/2 onion
- 1 avocado
- bunch of cilantro
- 2 limes
- 4 tbsp oil
- salt (to taste)
- 1 jalapeno (optional)
- Diet Coke® Feisty Cherry
Instructions: Peel and dice the onion. Cut the avocado in half; remove the pit; cut into slices and scoop out with a spoon. Chop the cilantro. Cut the limes into quarters.
A trick my co-founder Miguel taught me: Turn a small frying pan (~8″ diameter) on medium-low heat. Pour 1/2 tbsp of oil into the pan. Prepare a plate with 1 paper towel on top. When the oil is hot, put one tortilla in the pan, frying lightly. Flip and lightly fry the other side. Repeat for each tortilla, stacking them on each other to help absorb excess oil. Cover with a paper towel and set aside.
In the same pan: squeeze the chorizo from the tube into the pan. Begin to cut and dice it up with the spatula. Continue stir frying and chopping up the chorizo into small pieces until the chorizo is spread throughout the pan. Fry for 3-5 minutes, depending on preference. It can be difficult to tell when it’s “done”, but chorizo is best when still a little juicy, not dry.
Place a paper towel on a plate and scoop the chorizo onto it, to drain the excess fat.
Plate the tortillas – either single or double layered – then scoop ~2-3 tbsp of chorizo onto each one. Add a slice of avocado, chopped onion, and cilantro to taste. If you diced jalapeno, throw a little on.
Before eating, juice a lime quarter onto your taco and sprinkle with salt – the authentic way to eat chorizo tacos! Pair with a sip of Diet Coke Fiesty Cherry and you’ll be in heaven.
True Confession: I had a VERY hard time waiting long enough to capture photos and not immediately devour this pairing.
What I really love about a chorizo taco is that you experience so many flavors at once. With the the Diet Coke Fiesty Cherry, you really hit the entire flavor profile.
This is what I felt:
- Spicy – chorizo, jalapeno
- Umami – chorizo, avocado
- Sour – lime
- Salty – salt, duh!
- Bitter / Pungent – onion
- Sweet – Diet Coke Feisty Cherry
All of the flavors I love, so nicely paired together.
I even threw a lime wedge in my Diet Coke Fiesty Cherry, for flair.
When I was done eating, I felt the urge to eat something sweet (dessert!), but when I reached for my Diet Coke Fiesty Cherry, I realized that everything was right there~ It was actually a sweet conclusion to an awesome meal.
